Olive harvest

At Balduccio, the olive harvest begins in mid-October and usually continues until mid-November. During this period, the olives have not yet reached full ripeness, and the oil yield remains relatively low. However, these green, green-purple, and green-black olives—depending on the variety—produce an oil with an intense fruity character and a high concentration of natural polyphenols.

The olive varieties currently used for our oil are composed of approximately 70% Moraiolo, 20% Frantoio, and 10% other traditional varieties, including Leccio del Corno, Rossellino, Pendolino, and Maurino.
